Raw chocolate brownies with chocolate avocado frosting

Here is a deliciously decadent but quick and easy to make chocolate brownie recipe. Do not be put off by the avocado in the frosting- trust me, it's a thing. It's smooth, rich and creamy, yet even the fussiest eaters won't be able to taste the avocado (tried and tested on my own fussy eater!!)

Raw chocolate brownies simply mean they don't need cooking - you just blend up all the ingredients, and hey presto- you have a delicious and impressive looking dessert, made with wholesome, healthy, and unrefined ingredients. A dessert that's actually good for you!

Here are the ingredients you will need:

I have adapted this recipe from Lorraine Elliott at notquitenigella.com.

For the brownies:

100g hazelnuts

1 cup pitted dates

1/3 cup cocoa powder

2 tbsp coconut flakes

1 tbsp coconut oil

For the frosting:

1 ripe avocado

70g maple/ agave/ honey (if not vegan)

1/3 cup cocoa powder

2 tbsp vanilla extract

Pinch salt

Grated raw or dark chocolate- for decoration

To make the brownies, simply blend together the brownie ingredients in your food processor. Press them into a lined loaf tin, and set aside.

To make the frosting, blend together the frosting ingredients until smooth and creamy (you may need to use a high speed blender for this).

Spread on top of the brownies, sprinkle with the grated chocolate, then leave to set in the freezer for an hour. Cut into pieces, and enjoy.

You can store these in the freezer for a week or so- the icing will remain soft.
